Sorry I haven't posted in a couple weeks! Because of the hurricane, my power and wi-fi were out for quite a while.
A couple days ago I made these apple spice cupcakes, and they were literally the BEST cupcakes I ever had. Not too sweet, they just had a nice spice that tasted like fall. They're so much fun to make and use simple ingredients that you probably already have!!
Ingredients:
For the batter...
~ 1 and 3/4 cups flour
~ 1 and 1/2 Tbsp cornstarch
~ 3/4 tsp baking powder
~ 1/4 tsp baking soda
~ 1/4 tsp salt
~ 1 tsp cinnamon
~ dash of allspice
~ dash of nutmeg
~ dash of cloves
~ 1/2 cup room unsalted butter (softened to room temperature)
~ 1 cup sugar
~ 3 egg whites
~ 2 tsp vanilla extract
~ 1/2 cup sour cream
~ 1/2 cup milk
For the apple filling...
~ 3 apples (peeled and very finely diced)
~ 3 Tbsp brown sugar
~ 2 tsp vanilla extract
~ 1 and a 1/2 tsp cornstarch
~ 3/4 tsp cinnamon
~ 1/4 tsp nutmeg
~ 1/2 tsp ground cloves
For the frosting...
~ 1/2 cup unsalted butter (softened to room temperature)
~ 2 cups powdered sugar
~ 1 tsp cinnamon
~ 1 Tbsp milk
~ 2 tsp vanilla extract
Directions: (batter)
1. Preheat the oven to 350 degrees Farenheit. Line a muffin pan with 12 liners
2. In a large bowl, mix together the butter, sugar and vanilla. Add the rest of the wet ingredients
3. Whisk your dry ingredients and mix them into the wet ingredients
4. Fill the muffin cups 2/3 full and bake for 19-22 minutes
Directions: (apple filling)
1. Lightly grease a medium-size frying pan with butter
2. Saute` the filling ingredients on low heat until soft
Directions: (frosting)
1. Beat the frosting ingredients with a hand mixer
2. Put a tip into a piping bag and spoon in the frosting
Assembly:
* Make sure the cupcakes are totally cooled before decorating
1. Using the round end of a piping tip, cut a hole in the center of each of the cupcakes. Fill the center with apple filling.
2. Frost the cupcakes
3. Spoon more apple filling on top of the cupcake
4. Enjoy!!
