If your breakfasts usually consist of something like a bowl of cereal, or nothing at all, you are missing out! There are SO many fun, easy, and healthy recipes to choose from! Today, I'm sharing just a few of my favorites. Enjoy!
AVOCADO TOAST
(This one is literally SO GOOD.)
Ingredients:
- 1 medium size avocado
- 2 tsp lemon juice
- 1 T dried parsley
- 1 tsp olive oil
- salt to taste
- 2 pieces of whole grain bread
Directions:
1. Peel and and pit the avocado. Put in a bowl and mash with the back of a fork.
2. Add the lemon juice, parsley, olive oil, and salt. Stir together.
3. Butter both sides of the bread and put them in a frying pan on low heat. Once golden brown, flip and let the other side toast.
4. Put generous amount of the avocado mixture on each slice of bread. Enjoy with a cup of hot tea:)
FRUIT SMOOTHIE- serves 2
(Perfect for busy mornings.)
Ingredients:
-1 heaping cup frozen berries
-1 banana
-1 cup milk
-1 T honey
-1 T vanilla extract
Directions:
1. Place all the ingredients in a blender, and blend on high.
2. Pour into a tall glass. Enjoy!
EGGS IN A BASKET- serves 1
(Comfort food anyone?)
Ingredients:
-2 eggs
-2 pieces whole grain bread
Directions:
1. Butter both sides of the bread. Cut a hole in the middle of each using a small glass or cookie cutter. Place the bread in a frying pan.
2. Crack an egg into the hole that was cut in each slice of bread.
3. Cook on medium heat without lid until one side is fully cooked. Then flip and cook the other side. Enjoy with some fruit!
